Couscous with Vegetables and Spices – A Moroccan Delight

Ingredients:

  • 2 cups couscous
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 small eggplant, cubed
  • 1 carrot, peeled and sliced
  • 1 cup cooked chickpeas
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup raisins (optional)
  • 1/2 cup vegetable broth or water
  • 1 tablespoon lemon juice
  • Toasted almonds for garnish

Instructions:

  1. Prepare the Couscous:
    • In a large bowl, place the couscous. Add 1 tablespoon of olive oil and fluff with a fork to coat each grain.
    • Pour in 1 cup of vegetable broth or water, cover the bowl, and let the couscous steam for about 5 minutes.
    • Once cooked, fluff the couscous again to separate the grains. Set aside.
  2. Cook the Vegetables:
    • Heat the remaining tablespoon of olive oil in a large skillet or pan over medium heat.
    • Add the onion and sauté until soft and translucent, about 5 minutes.
    • Stir in the bell pepper, zucchini, eggplant, and carrot, cooking for about 8 minutes, until the vegetables are tender.
    • Add the cooked chickpeas, cumin, coriander, turmeric, cinnamon, salt, and pepper, stirring to coat the vegetables evenly with the spices. Cook for another 3-4 minutes to allow the flavors to meld.
  3. Combine and Garnish:
    • Once the vegetables are cooked, pour them over the couscous. Drizzle with lemon juice and toss gently to combine everything.
    • Sprinkle the chopped parsley and raisins (if using) over the couscous mixture, giving it a final stir.
    • Top with toasted almonds for an extra crunch and a burst of flavor.
